Summer Recipe for a Delicious, Healthy Burger Option!

We’re in store for some more days of hot summer weather—perfect for barbecues!

How about a change of pace from the hamburger and potato salad? Here’s a healthier burger option a customer gave me and they are delicious!

Turkey Spanakopita Burgers

1 lb. ground turkey breast, 1 package
¼ Cup Italian bread crumbs
½ package frozen chopped spinach, thawed
1 egg
1 tbs. parsley
½ tsp. Greek seasoning
½ red onion and two garlic cloves, cooked slightly in olive oil

Heat a large nonstick skillet over medium heat. Add a little olive oil (add a tablespoon of butter, if you wish). When butter melts, add the chopped garlic and chopped red onion and cook 5 minutes. Transfer the onions and garlic to a bowl to cool.

Press out liquid from defrosted spinach in colander.  Separate spinach as you add it to bowl w/cooled onions and garlic; season w/parsley & Greek seasoning.   Add turkey and a drizzle of extra-virgin olive oil.  Mix and form into 4 thick patties. Cook on the grill or in a pan.

OPTIONAL: If desired, add feta cheese to burgers before cooking and/or 1 red onion, thinly sliced, to top burger for sandwich. Consider a whole grain roll for more fiber and nutrition, and toast it if you prefer.

    We love our Spanakapita Turkey Burgers, always have some of these in the freezer for a quick and healthy meal. Glad you like it so much to share it 🙂
