Pam Estey’s Kale Salad

Labor Day has come and gone, but that does not mean that you have to say goodbye to tasty summer salads. We still have more than a couple of weeks until summer is “officially” over. If you are looking for a healthful green salad to add to a picnic or barbeque, try this delicious kale salad.

This was brought to one of our Natur-Tyme barbecues by our fabulous co-worker and amazing cook, Pam Estey. I love it too because it can be prepared the night before and there are no last minute preparations to worry about. She is happy to share!


1 Bunch Kale (about 1 lb)


1 tsp Dry Mustard

¼ tsp Pepper

1 clove Garlic, Minced

2 Tbsp Balsamic Vinegar

3 Tbsp Pure Maple Syrup

1 Tbsp Lemon Juice

¼ cup Organic Apple Cider Vinegar

½ cup Extra Virgin Olive Oil

1 tsp Himalaya or Sea Salt

Mix and add to chopped kale.  Refrigerate overnight.
